What She Ate: Spice It Up

First and foremost, I was greatly saddened today to hear of the loss of Kathreen Ricketson, founder of Whipup, and her partner Robert Shugg.    For those of you familiar with the crafting blog world, you will know what an amazing contributor and community creator she was.  Kathreen’s posts were always on the top of my list to read each week and I was excitedly following her families adventure as they camped across Australia on a year long dream.   A fund has been set up for their two children.  You can find out more here.

My contribution for this round of What She Ate:  Spice It Up, is a dish we have made several times since I started this elimination diet.  It’s very satisfying as a side or as a main.  My go-to spice is cumin and this uses it very well.  Cumin and beans are best friends.  Gallo Pinto is a traditional dish of Costa Rica.

Here is our version:

2 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
3 cups rice, cooked
2 cups black beans
1 tsp cumin
1 tsp coriander
1/2 tsp ginger
2 tbsp wine vinegar
1 tbsp maple syrup
salt and pepper to taste

heat pan on medium heat.  add onions.  cook until soft.  add garlic, cook until onions are golden.  add remaining ingredients and cook until heated through.
